Dairy Recipes - Dulce de leche & Rice Pudding & Brigadeiro from Latin America

We love dairy! In appreciation of dairy farmers (and their cows) around the world, we’re sharing the favourite dairy recipes of our colleagues in Latin America. Enjoy!


Dulce de leche


  • 2 liters of milk
  • 4 cups of sugar

How to do: Put the milk and sugar in a large deep-bottomed pan. Bring to medium heat, stirring constantly with a wooden spoon until boiling (about 15 minutes). Reduce the heat and continue stirring until you get a light brown candy of creamy consistency (about 45 minutes)


Rice Pudding


  • 2 cups of rice
  • 10 cups of water
  • 1 liter of milk
  • 1 can of condensed milk
  • Sugar and cinnamon to taste

How to do: Cook, over low heat, the rice in the 10 cups water, until the rice is soft. Add one liter of milk and stir well. Let it boil for five minutes. Add the condensed milk, stirring constantly. If it is not sweet enough, add more condensed milk or four to six tablespoons of sugar. Let reduce until thick broth. After reduced, place in individual portions or on a platter, and sprinkle with cinnamon powder.




  • 1 tablespoon of butter or margarine
  • 1 can of condensed milk
  • 4 tablespoons of chocolate powder
  • 1 package of granulated chocolate

How to do: Heat the pan over medium heat. Add 1 tablespoon of butter. Right after this, use all the condensed milk next to the butter. Then add 4 tablespoons of Powder Chocolate and stir continuously until it comes out of the pan. Grease a container where the mixture will be poured and make small balls with the hand passing the mixture in the granulated chocolate.
